Who doesn’t love fun snacks like this??? My kids helped me make these smileys and they ate it too. They liked it. I used straws for eyes and butter knife for smile. I hope you try them and enjoy it like we did. I kind of merged two recipes I found on blogs and made these…

Ingredients:
3 large potatoes
Cheese 3 tbsp grated
1/4 cup coriander leaves (or use any other finely chopped herbs/greens)
4 tbsp cornflour (or use all purpose flour)
1/2 tsp ginger garlic paste
1/2 tsp (or more) red chilli powder
1/4 tsp turmeric
salt – to taste
oil, for frying
Method:
1. Wash potatoes, cube them with skin and boil for 2 whistles in pressure cooker (or) boil in water until fork tender. Once cool, peel.2. Mash potatoes in a bowl and add coriander leaves, cornflour, ginger garlic paste, turmeric, chilli powder, garam masala, salt and lemon juice. If the dough is too sticky, add a little more flour. Refrigerate the dough for atleast 30 mins.

3. Make small lemon sized balls, flatten and shape into a circle. Using the straw, make two eyes and a smile with a blunt knife. Continue to do the same with rest of the dough.

4. Make sure you serve them hot. They are very crispy when they are hot. Once they cool down completely they become very soft. They spoil also very fast. Make sure you make them in limited quantities.

Sorry For The Long Break!!!

Kids Summer holidays started. I am enjoying every minute being with them. I look forward to this time of the year from the time school starts. I like that they are also as excited as me to stay home with me. I like seeing them play and be the brother and sister I dreamed they would be. I work on weekends when hubby is there to take care of them. Any free time that is left I spend with them. As I am staying home, I am using this time to prepare myself to get a better job. I spend all my time from Monday to Thursday on kids and studies. Saturday and Sunday goes in work. Friday is only day I am free. I took so many pics of dishes I made. I must upload them to the website. So I decided to spend time on the website too. Expect to see lot of posts  from me. Thanks so much  for visiting my blog…
