Bitter guard fry

 Ingredients:

2 bitter guards

1/4 onion chopped

2 green chillies slit length wise

1/2 tsp ginger garlic paste

2 curry leaves

4 sprigs of coriander leaves chopped

1 tbsp peanut powder

1 tbsp sesame seeds powder

1 tsp chilli powder

Salt to taste

Pinch of turmeric

1/4 tsp jeera

4 tsp +4 tsp oil

Method:

  • Chop the bitter guard to small cubes.
  • Heat 4 tsp of oil.
  • Add bitter guard pieces and fry for 7-8 mts. This will reduce the bitterness a little.
  • Heat 4 tsp of oil.
  • Add jeera.
  • After they brown up add onions, chillies and curry leaves.
  • Fry them for 1-2 mts and add ginger garlic paste and turmeric.
  • Fry for few seconds and add bitter guard pieces.
  • Add all the powders including sugar.
  • Mix everything once and sprinkle little bit of water in it.
  • Reduce the heat to low and fry for 20 mts.
  • Garnish with coriander leaves and enjoy.
  • Perfect side dish.

    I am going to post bitter gourd tomorrow!! Love ur preparation. I never had this with so much spice. Beautiful pic.
