Ingredients:

1 bottle guard

1/2 onion chopped

12 small green chillies

3 cloves of garlic crushed

3 curry leaves

4 sprigs of coriander leaves chopped

1/2 tsp jeera

1/2 tsp mustard seeds

1/4 tsp turmeric

Salt to taste

1 tsp coconut powder

6-7 tbsp oil

Method:

  • Heat the oil.
  • Add jeera and mustard seeds.
  • After they splutter, add onions and chillies.
  • Fry for 2 mts and add garlic.
  • Fry for few seconds and add turmeric powder.
  • Add bottle guard, mix everything, add salt and keep the lid.
  • It will take app 20-30 mts on little less than medium heat for the bottle guard to cook.
  • When it is completely cooked add coconut powder and keep for another 10mts.
  • Garnish with cilantro leaves and enjoy.
  • Perfect side dish.

{September 4, 2008}   Bottle gourd curry with tomatoes

 I am back into my blogging world after my short vacation. Hope every one had a nicelong weekend. We had lots of fun. I will share pictures some other time. Coming to this recipe, we call this “sorakaya shorwa”.Here goes the recipe:

Ingredients:

1/2 bottle gourd

2 medium tomatoes cut into chunks

1/4 cup onions

1 tsp ginger garlic paste

2 curry leaves

3 green chillies slit lengthwise

1/4 tsp jeera

1 elachi

1 clove

1/4 inch cinnamon

1/4 tsp turmeric

1tbsp chilli powder (adjust according to your taste)

1/2 tbsp dry coconut powder

salt according to your taste.

You will need a  pressure cooker for this.

Method:

Heat 7-8 tbsp of oil in a pressure cooker.

Add cumin seed, elachi, clove and cinnamon.

Add onion, chillies and curry leaves.

Fry them until onion becomes translucent.

Add ginger garlic paste.

Fry for a minute and add turmeric.

Add tomatoes and fry for a minute.

Add bottle gourd and mix everything once.

Fry for a minute and add chilli powder , salt and coconut powder.

Mix everything once and add 1/2 cup water.

Close the lid and give one whistle.

After the pressure is gone, open the lid, taste and see if it needs anything.

Garnish with coriander leaves and enjoy.

Perfect with rice.
